2 tablespoons olive oil
1 onion
2 cloves of garlic
1 red bell pepper

Instructions
1Wash the spinach and cut it into large pieces.
2Finely chop the onion and cut the garlic and bell pepper into small pieces.
3Heat 1 tablespoon of olive oil in a pan and sauté the onion and garlic. Add the spinach and let it wilt.
4Place the wilted spinach in a blender with the milk and blend until smooth.
5In a bowl, mix the flour with the baking powder and salt. Add the eggs and the spinach mixture and stir until smooth batter.
