Ingredients

  • large sweet potatoes
  • liter vegetable broth
  • cloves of garlic, minced
  • onion, chopped
  • tablespoons olive oil
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 200 ml vegan cream
  •  Salt and pepper to taste
  •  Fresh cilantro for garnish

Instructions

  1. 1 Peel the sweet potatoes and cut them into cubes.
  2. 2 Heat the olive oil in a large pot and add the onion and garlic. Cook until the onion is translucent.
  3. 3 Add the sweet potato cubes, along with the turmeric, paprika, and cayenne pepper. Cook for about 5 minutes over medium-high heat.
  4. 4 Add the vegetable broth and let the soup cook for about 20 minutes, or until the sweet potato is soft.
