2 tablespoons olive oil
1 large onion, finely chopped
2 carrots, diced
2 stalks celery, finely chopped
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon turmeric
1 cup green lentils
4 cups vegetable broth
1 can peeled tomatoes
fresh parsley for serving
salt and pepper to taste

Instructions
1Heat the olive oil in a large pot over medium-high heat.
2Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
