  • red bell pepper
  • yellow bell pepper
  • eggplant
  • zucchini
  • medium onions
  • cloves of garlic
  • can of diced tomatoes (400 grams)
  • 200 grams of quinoa
  • tablespoons of olive oil
  • teaspoon of thyme
  • teaspoon of rosemary
  •  Salt and pepper to taste
  •  Handful of fresh basil for garnish
