1 tablespoon olive oil
1 large onion, chopped
2 cloves of garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
2 cans kidney beans (400 g each), drained
1 can diced tomatoes (400 g)
1 tablespoon chili powder
pinch of salt
1 teaspoon cumin
1 teaspoon oregano
1 can corn (200 g), drained
fresh coriander, for garnish
4 servings of brown rice, cooked

Instructions
1Heat the olive oil in a large pan over medium-high heat.
2Add the onion and garlic and cook until soft.
3Add the bell peppers and cook for 5 minutes.
4Add the kidney beans, diced tomatoes, chili powder, salt, cumin, and oregano. Stir well.
5Let it simmer for about 25 minutes, until the flavors are well combined.
6Add the corn and stir well.
7Serve the chili sin carne over the cooked rice and garnish with fresh coriander. Enjoy!
