Ingredients

  • tablespoon olive oil
  • large onion, chopped
  • cloves of garlic, minced
  • red bell pepper, diced
  • yellow bell pepper, diced
  • cans kidney beans (400 g each), drained
  • can diced tomatoes (400 g)
  • tablespoon chili powder
  •  pinch of salt
  • teaspoon cumin
  • teaspoon oregano
  • can corn (200 g), drained
  •  fresh coriander, for garnish
  • servings of brown rice, cooked

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft.
  3. 3 Add the bell peppers and cook for 5 minutes.
  4. 4 Add the kidney beans, diced tomatoes, chili powder, salt, cumin, and oregano. Stir well.
  5. 5 Let it simmer for about 25 minutes, until the flavors are well combined.
  6. 6 Add the corn and stir well.
  7. 7 Serve the chili sin carne over the cooked rice and garnish with fresh coriander. Enjoy!
