4 cod fillets
1 zucchini
2 red bell peppers
1 eggplant
2 cloves of garlic
Olive oil
Salt and pepper
Bunch of fresh basil
200 ml crème fraîche

Instructions
1Preheat the oven to 200 degrees Celsius.
2Cut the zucchini, bell peppers, and eggplant into cubes and spread on a baking sheet.
3Season the vegetables with salt and pepper, drizzle with olive oil, and roast in the oven for 20 minutes.
4Rub the cod fillets with olive oil, salt, and pepper and place on another baking sheet. Roast these for the last 12-15 minutes with the vegetables until crispy and golden brown.
5Meanwhile, make the basil sauce by blending the basil, garlic, crème fraîche, and some salt and pepper in a blender.
6Serve the cod with the roasted vegetables and a generous dollop of basil sauce. Enjoy!
