  • zucchini
  • red bell peppers
  • eggplant
  • cloves of garlic
  •  Olive oil
  •  Salt and pepper
  •  Bunch of fresh basil
  • 200 ml crème fraîche

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the zucchini, bell peppers, and eggplant into cubes and spread on a baking sheet.
  3. 3 Season the vegetables with salt and pepper, drizzle with olive oil, and roast in the oven for 20 minutes.
  4. 4 Rub the cod fillets with olive oil, salt, and pepper and place on another baking sheet. Roast these for the last 12-15 minutes with the vegetables until crispy and golden brown.
  5. 5 Meanwhile, make the basil sauce by blending the basil, garlic, crème fraîche, and some salt and pepper in a blender.
