Ingredients

  • 200 grams brown rice
  • 500 grams large shrimp
  • large carrots
  • red bell pepper
  • 200 grams sugarsnaps
  • tablespoons sunflower oil
  • cloves garlic, minced
  • tablespoon grated fresh ginger
  • spring onions, sliced
  •  Juice of 1 lime
  • tablespoons soy sauce
  • tablespoon honey

Instructions

  1. 1 Cook the brown rice according to the instructions on the package and set aside.
  2. 2 Heat the sunflower oil in a large wok or skillet over medium-high heat.
  3. 3 Add the garlic and ginger and cook for 1-2 minutes until fragrant. Be careful not to burn them!
  4. 4 Add the shrimp and stir-fry until they are pink and cooked through, about 3-4 minutes.
  5. 5 Add the carrots, bell pepper, and sugarsnaps and stir-fry for another 3-4 minutes until the vegetables are crispy and vibrant.
  6. 6 In a small bowl, mix together the lime juice, soy sauce, and honey and pour over the stir-fry.
  7. 7 Serve the stir-fry over the brown rice and garnish with the spring onions. And voilá, your meal is ready!
