300 grams red lentils

1 large onion, chopped

3 cloves of garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons curry powder

400 grams canned diced tomatoes

400 ml coconut milk

1 tablespoon olive oil

Salt and pepper to taste

Rinse the red lentils under cold water until the water runs clear.

Heat the olive oil in a large pan and add the onion, garlic, and ginger. Cook over medium heat until the onion becomes translucent.
