2 tablespoons olive oil
1 onion, finely chopped
3 cloves of garlic, finely chopped
2 bell peppers, diced
2 carrots, diced
1 zucchini, diced
400 grams kidney beans, drained and rinsed
400 grams black beans, drained and rinsed
400 grams canned diced tomatoes
2 teaspoons cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh cilantro for garnish

Instructions
1Heat the olive oil in a large pan over medium-high heat.
