Energetic Nut Date Bars

These nut date bars are a perfect snack for an energy boost at any time of the day. They are easy to make, full of flavor, and packed with nutrients!

Ingredients

  • 200 g dates, pitted
  • 100 g almonds
  • 50 g walnuts
  • 50 g pumpkin seeds
  • tablespoons chia seeds
  • tablespoons honey
  •  Pinch of salt

Instructions

  1. 1 Place the dates in a bowl and pour hot water over them. Let soak for 10 minutes.
  2. 2 Meanwhile, place the almonds, walnuts, and pumpkin seeds in a food processor and pulse into a coarse mixture.
  3. 3 Drain the dates and add them to the food processor. Also add the chia seeds, honey, and salt.
  4. 4 Mix everything into a sticky mixture.
  5. 5 Line a baking dish with parchment paper and press the mixture into it. Press down firmly with the back of a spoon.
  6. 6 Refrigerate the dish for at least 1 hour to set.
  7. 7 Cut into bars. Store in the refrigerator.
