6 ripe tomatoes
1 cucumber
1 red bell pepper
1 small red onion
2 cloves of garlic
60 ml olive oil
2 tablespoons red wine vinegar
Salt and pepper to taste
4 slices of whole grain bread
1 tablespoon olive oil (for the bread)

Instructions
1Cut the tomatoes, cucumber, bell pepper, onion, and garlic into pieces.
2Put the vegetables in a blender and add the olive oil and vinegar.
3Puree until smooth. Add some water if the soup is too thick.
4Season with salt and pepper and chill the soup in the fridge for at least an hour.
5Drizzle the bread with olive oil and toast it in a skillet until golden brown. Serve with the gazpacho.
