Fresh Gazpacho with Toasted Bread

Ingredients

  • ripe tomatoes
  • cucumber
  • red bell pepper
  • small red onion
  • cloves of garlic
  • 60 ml olive oil
  • tablespoons red wine vinegar
  •  Salt and pepper to taste
  • slices of whole grain bread
  • tablespoon olive oil (for the bread)

Instructions

  1. 1 Cut the tomatoes, cucumber, bell pepper, onion, and garlic into pieces.
  2. 2 Put the vegetables in a blender and add the olive oil and vinegar.
  3. 3 Puree until smooth. Add some water if the soup is too thick.
  4. 4 Season with salt and pepper and chill the soup in the fridge for at least an hour.
  5. 5 Drizzle the bread with olive oil and toast it in a skillet until golden brown. Serve with the gazpacho.
