Ingredients

  • 400 grams chicken breast
  • 200 grams quinoa
  • red bell pepper
  • zucchini
  • carrots
  • onion
  • cloves of garlic
  • 400 ml chicken broth
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Cut the chicken breast into cubes and the vegetables into small pieces
  2. 2 Heat the olive oil in a large pan and cook the chicken breast until golden brown
  3. 3 Add the onion and garlic and cook until soft
  4. 4 Add the bell pepper, zucchini, and carrot and cook for 5 minutes
  5. 5 Add the quinoa and chicken broth. Stir well, cover the pan, and let it simmer for 20 minutes
