Ingredients

  • tablespoons olive oil
  • large onion, chopped
  • cloves of garlic, minced
  • tablespoon curry powder
  • teaspoon turmeric
  • 1/2 teaspoon chili powder
  • cup green lentils, rinsed
  • can (400g) diced tomatoes
  • cups vegetable broth
  • large carrot, sliced
  • red bell pepper, sliced
  • cup spinach
  •  Salt and pepper to taste
  •  Fresh cilantro for garnish (optional)

Instructions

  1. 1 Heat the olive oil in a large pan over medium heat
