Invigorating Salmon Fillet with Lemon and Dill

This light and airy dinner is the perfect healthy evening meal. The salmon fillet is wonderfully fresh with lemon and dill, and is served on a bed of crispy green beans and soft sweet potato. The combination of these flavors is truly amazing. And the best part? It's super easy to make! So no stress, you can definitely do this!

Ingredients

  • salmon fillets
  • lemons
  •  A handful of fresh dill
  • 500 grams green beans
  • sweet potatoes
  •  Olive oil
  •  Salt and pepper

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius.
  2. 2 Place the salmon fillets on a baking sheet. Slice 1 lemon into thin slices and place them on and around the salmon fillets. Sprinkle with fresh dill, salt, and pepper.
  3. 3 Bake the salmon in the oven for 20-25 minutes.
  4. 4 Meanwhile, cook the green beans until just tender, about 5 minutes.
  5. 5 Peel the sweet potatoes and dice them. Put them in a pan with water and cook until soft, about 20 minutes.
  6. 6 Once everything is ready, place the salmon fillet on a bed of green beans and sweet potato. Garnish with an extra slice of lemon, and a little of the remaining fresh dill. Enjoy!
