Italian Courgettini with Fresh Tomato Sauce and Chicken

Ingredients

  • zucchinis
  • 400 g chicken breast
  • 800 g fresh tomatoes
  • cloves of garlic
  • onion
  • bunch of basil
  •  Olive oil
  •  Salt and pepper

Instructions

  1. 1 Wash the zucchinis and make courgettini with a spiralizer. Don't have a spiralizer? No problem! You can also use a peeler to make thin slices.
  2. 2 Cut the chicken breast into cubes and fry them in a pan with a little olive oil until cooked.
  3. 3 Finely chop the onion and garlic. Dice the tomatoes.
  4. 4 Heat some olive oil in another pan and sauté the garlic and onion. Add the tomatoes and let it simmer for 15 minutes.
  5. 5 Add the cooked chicken to the tomato sauce and let it simmer for another 5 minutes.
  6. 6 Meanwhile, heat a little olive oil in another pan and sauté the courgettini for about 2 minutes.
  7. 7 Serve the courgettini with the chicken and tomato sauce, and garnish with fresh basil. Buon appetito!
