Italian Courgettini with Fresh Tomato Sauce and Chicken
A delicious Italian classic with a healthy twist! Instead of traditional spaghetti, we use courgettini - thin slices of zucchini that perfectly replace pasta. Combined with a homemade fresh tomato sauce and juicy pieces of chicken, this is a light, nutritious, and above all tasty meal. No stress! It's easier to make than you think.

4 zucchinis
400 g chicken breast
800 g fresh tomatoes
4 cloves of garlic
1 onion
1 bunch of basil
Olive oil
Salt and pepper

Instructions
1Wash the zucchinis and make courgettini with a spiralizer. Don't have a spiralizer? No problem! You can also use a peeler to make thin slices.
2Cut the chicken breast into cubes and fry them in a pan with a little olive oil until cooked.
3Finely chop the onion and garlic. Dice the tomatoes.
4Heat some olive oil in another pan and sauté the garlic and onion. Add the tomatoes and let it simmer for 15 minutes.
5Add the cooked chicken to the tomato sauce and let it simmer for another 5 minutes.
6Meanwhile, heat a little olive oil in another pan and sauté the courgettini for about 2 minutes.
7Serve the courgettini with the chicken and tomato sauce, and garnish with fresh basil. Buon appetito!
