Ingredients

  • tablespoons olive oil
  • carrots, diced
  • stalks of celery, diced
  • yellow onion, chopped
  • cloves of garlic, minced
  • small zucchini, diced
  • 200 grams of chicken breast, diced
  • can of diced tomatoes (400 grams)
  • liter of chicken broth
  • can of cannellini beans (400 grams), rinsed and drained
  • 75 grams of fresh spinach
  •  Salt and pepper to taste
  •  Fresh basil for garnish

Instructions

  1. 1 Heat the olive oil in a large pot over medium-high heat.
  2. 2 Add the carrots, celery, onion, garlic, and zucchini. Cook until soft (about 10 minutes).
