2 tablespoons olive oil
2 carrots, diced
2 stalks of celery, diced
1 yellow onion, chopped
3 cloves of garlic, minced
1 small zucchini, diced
200 grams of chicken breast, diced
1 can of diced tomatoes (400 grams)
1 liter of chicken broth
1 can of cannellini beans (400 grams), rinsed and drained
75 grams of fresh spinach
Salt and pepper to taste
Fresh basil for garnish

Instructions
1Heat the olive oil in a large pot over medium-high heat.
2Add the carrots, celery, onion, garlic, and zucchini. Cook until soft (about 10 minutes).
3Add the chicken breast and cook until done (about 10 minutes).
4Add the diced tomatoes, chicken broth, and cannellini beans. Let the soup simmer for 20 minutes.
5Add the spinach and cook until wilted (about 2 minutes).
