Italian lentil soup with fresh tomatoes and Parmesan cheese

400 grams lentils, rinsed and drained

1 liter vegetable broth

400 grams fresh tomatoes, chopped

1 teaspoon dried thyme

1 teaspoon salt

50 grams Parmesan cheese, grated

Heat the olive oil in a large pot over medium-high heat.

Add the onion, carrots, and celery and cook until soft.

Add the garlic and cook for another minute.

Add the lentils, vegetable broth, tomatoes, thyme, salt, and pepper.
