Italian Pollo alla Cacciatora
Pollo alla Cacciatora, or 'hunter's chicken', is a tasty and savory Italian dish. The combination of chicken, tomatoes, olives, and herbs will transport you straight to sunny Italy. Don't be intimidated by the name, it's easier to make than you think. No stress, it will turn out great!
Ingredients

4 chicken breasts

1 onion, finely chopped

2 cloves of garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

400 grams canned diced tomatoes

1 tablespoon tomato paste

125 grams black olives

2 teaspoons dried oregano

2 teaspoons dried basil

Olive oil

Heat some olive oil in a large pan over medium-high heat.

Add the chicken breasts and cook until golden brown. Remove them from the pan and set aside.

In the same pan, add the onion, garlic, and bell peppers. Cook for about 5 minutes over low heat until the vegetables are soft.

Add the diced tomatoes, tomato paste, olives, and herbs to the pan. Stir everything together.

Return the chicken breasts to the pan. Bring to a boil and then let it simmer for 20 minutes with the lid on.
