200 grams quinoa
2 chicken breasts
1 ripe mango
100 grams fresh spinach
1 red bell pepper
handful of cherry tomatoes
2 tablespoons olive oil
juice of 1 lime
salt and pepper

Instructions
1Cook the quinoa according to the instructions on the package. Rinse well and set aside.
2Heat a grill pan and rub the chicken breasts with a little olive oil, salt, and pepper. Grill the chicken until fully cooked, about 7 minutes on each side. Let rest for a moment and then slice thinly.
3Cut the mango, bell pepper, and cherry tomatoes into small pieces. Place them in a large bowl along with the spinach.
4Add the cooked quinoa and sliced grilled chicken to the bowl.
