4 egg whites
200 g sugar
1 tsp white wine vinegar
1 tsp cornstarch
1 vanilla bean
250 g strawberries
200 ml whipped cream

Instructions
1Preheat the oven to 150 degrees Celsius.
2Beat the egg whites in a grease-free bowl until stiff. Gradually add the sugar and continue beating until you have a shiny, firm mixture.
3Stir in the cornstarch and white wine vinegar.
4Scrape the vanilla from the bean and fold it into the egg white mixture.
5Create a round shape of the egg white mixture on a baking sheet lined with parchment paper.
6Bake the meringue for 60 minutes until golden brown and let it cool completely in the oven.
7Whip the cream until stiff and spread it over the meringue. Garnish with the strawberries. And there you have your light strawberry meringue cake!
