4 salmon fillets
4 medium potatoes, peeled and diced
2 lemons, juiced
2 tablespoons olive oil
1 red onion, finely chopped
1 handful of black olives, pitted and halved
2 tablespoons capers
Salt and pepper to taste
Fresh parsley, finely chopped

Instructions
1Preheat the oven to 200 degrees Celsius.
2Place the salmon fillets in a baking dish and drizzle with the lemon juice and a tablespoon of olive oil. Season with salt and pepper. Bake the salmon in the oven for 15-20 minutes, or until cooked through.
