Ingredients

  • small tortillas
  • red bell pepper
  • yellow bell pepper
  • can of red beans (400g)
  • can of corn (300g)
  • onion
  • cloves of garlic
  • tsp cumin
  • tsp paprika powder
  • 1/2 tsp cayenne pepper
  • 200 g grated cheddar
  • 200 g Greek yogurt
  • lime
  •  fresh coriander
  •  olive oil
  •  salt and pepper

Instructions

  1. 1 Finely chop the onion and garlic. Cut the bell peppers into small cubes.
  2. 2 Heat some olive oil in a pan and sauté the onion and garlic. After a few minutes, add the bell peppers and let them sauté.
  3. 3 Add the beans and corn, along with the cumin, paprika powder, and cayenne pepper. Mix everything well and let it simmer over low heat.
  4. 4 Meanwhile, make the sauce by mixing the yogurt with the lime juice. Season with salt and pepper.
  5. 5 Warm up the tortillas according to the instructions on the package.
  6. 6 Top each tortilla with the bean mixture, sprinkle with cheddar, and finish with the yogurt sauce and fresh coriander.
