8 small tortillas
1 red bell pepper
1 yellow bell pepper
1 can of red beans (400g)
1 can of corn (300g)
1 onion
2 cloves of garlic
1 tsp cumin
1 tsp paprika powder
1/2 tsp cayenne pepper
200 g grated cheddar
200 g Greek yogurt
1 lime
fresh coriander
olive oil
salt and pepper

Instructions
1Finely chop the onion and garlic. Cut the bell peppers into small cubes.
2Heat some olive oil in a pan and sauté the onion and garlic. After a few minutes, add the bell peppers and let them sauté.
3Add the beans and corn, along with the cumin, paprika powder, and cayenne pepper. Mix everything well and let it simmer over low heat.
4Meanwhile, make the sauce by mixing the yogurt with the lime juice. Season with salt and pepper.
5Warm up the tortillas according to the instructions on the package.
6Top each tortilla with the bean mixture, sprinkle with cheddar, and finish with the yogurt sauce and fresh coriander.
