Stuffed Sweet Potatoes with Black Beans and Feta

Ingredients

  • large sweet potatoes
  • can black beans, rinsed and drained
  • 200 grams feta cheese, crumbled
  • spring onions, finely chopped
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat your oven to 200 degrees Celsius.
  2. 2 Poke the sweet potatoes a few times with a fork. Place them on a baking sheet and bake for 45 minutes or until soft.
  3. 3 While the potatoes are baking, heat the black beans in a pan over medium-high heat. Add salt and pepper for extra flavor.
  4. 4 Once the potatoes are done, cut them open and scoop out some of the flesh to make room for the filling.
  5. 5 Fill each potato with the warm black beans and crumbled feta.
  6. 6 Sprinkle each potato with some spring onions and a drizzle of olive oil.
