Stuffed Sweet Potatoes with Black Beans and Feta
These delicious stuffed sweet potatoes are the perfect lunch to keep your energy levels up all day long! Packed with fiber and protein, this healthy meal is both filling and super tasty. And the best part? It's super easy to make! No stress, you can do it!

4 large sweet potatoes

1 can black beans, rinsed and drained

200 grams feta cheese, crumbled

2 spring onions, finely chopped

2 tablespoons olive oil

Salt and pepper to taste

Preheat your oven to 200 degrees Celsius.

Poke the sweet potatoes a few times with a fork. Place them on a baking sheet and bake for 45 minutes or until soft.

While the potatoes are baking, heat the black beans in a pan over medium-high heat. Add salt and pepper for extra flavor.

Once the potatoes are done, cut them open and scoop out some of the flesh to make room for the filling.
