Vega Gado Gado Salad
A colorful and nutritious vegetarian version of the traditional Indonesian Gado Gado salad.
Ingredients

200 grams green beans

4 eggs

2 large potatoes

200 grams tofu

100 grams bean sprouts

1 cucumber

1 red bell pepper

4 tablespoons peanut sauce

Ketjap for marinating

Coconut oil for frying

Fried onions for garnish

Fresh coriander for garnish
Instructions

Cut the tofu into cubes and marinate it in ketjap for at least 30 minutes.

Meanwhile, cook the eggs and potatoes until done. Cut the potatoes into wedges.

Blanch the green beans and bean sprouts briefly in boiling water.

Cut the cucumber and bell pepper into thin strips.

Fry the tofu in coconut oil until crispy.

Divide all ingredients over four plates and drizzle the peanut sauce on top.
