Vega Kale Mash with Roasted Pine Nuts

This is a healthy and vegetarian version of the traditional Dutch kale mash. It is a delicious, filling dish that is perfect for the cold winter months. The addition of roasted pine nuts gives a surprising twist to this classic comfort food.

Ingredients

  • kg floury potatoes
  • 500 grams sliced kale
  • 100 grams pine nuts
  • 50 ml warm milk
  • tablespoons olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Peel the potatoes and cut them into equal pieces.
  2. 2 Put the potatoes in a large pan, add water until they are just covered and bring to a boil.
  3. 3 After 10 minutes, add the kale and cook for another 15 minutes.
  4. 4 Meanwhile, roast the pine nuts in a dry pan until they are golden brown. Don't stress! Stay with them as they can quickly burn.
  5. 5 Drain the potatoes and kale and mash them with a masher.
  6. 6 Add the warm milk and olive oil and mix well. This adds extra flavor and a creamy texture.
  7. 7 Season with salt and pepper and stir in the roasted pine nuts.
  8. 8 Serve the mash with a little extra olive oil on top. Enjoy!
