Vega Lentil Stew with Vegetables and Herb Dressing

4 large carrots, sliced

4 stalks of celery, chopped

4 medium potatoes, diced

1 liter vegetable broth

For the herb dressing:

Handful of fresh parsley, chopped

Handful of fresh mint, chopped

Juice of 1 lemon

Instructions

Heat the olive oil in a large pot over medium-high heat.

Add the onion and garlic and sauté until soft.

Add the carrots, celery, potatoes and sauté for about 5 minutes.

Add the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes until the vegetables are tender.

While the stew is cooking, prepare the herb dressing. Mix the chopped herbs, lemon juice, olive oil, salt, and pepper in a bowl.
