Ingredients
4 large carrots, sliced
4 stalks of celery, chopped
4 medium potatoes, diced
1 large onion, chopped
4 cloves of garlic, minced
1 liter vegetable broth
2 tablespoons olive oil
Salt and pepper to taste
For the herb dressing:
Handful of fresh parsley, chopped
Handful of fresh mint, chopped
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste

Instructions
1Heat the olive oil in a large pot over medium-high heat.
2Add the onion and garlic and sauté until soft.
3Add the carrots, celery, potatoes and sauté for about 5 minutes.
4Add the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes until the vegetables are tender.
5While the stew is cooking, prepare the herb dressing. Mix the chopped herbs, lemon juice, olive oil, salt, and pepper in a bowl.
