200 grams quinoa
400 grams black beans, rinsed and drained
250 grams cherry tomatoes, halved
1 red bell pepper, diced
1 avocado, diced
1 red onion, finely chopped
1 handful fresh cilantro, finely chopped
For the dressing:
Juice of 2 limes
2 tablespoons olive oil
1 clove garlic, minced
1 teaspoon ground cumin
Salt and pepper to taste

Instructions
1Cook the quinoa according to the package instructions and let it cool.
2In a large bowl, combine the quinoa, black beans, tomatoes, bell pepper, avocado, and red onion.
